I love Paleo dishes that are quick and easy AND delicious! It's also a bonus if they make lots of leftovers! This is a perfect example from Sarah Fragoso's book Everyday Paleo.
3 yams
1 lb. ground pork sausage
3 TBS coconut oil
2 TBS cinnamon
1. Grate yams with a cheese grater or processor (processor MUCH better!)
2. In large skillet, brown the sausage
3. Add the coconut oil and yams, continue cooking another 7-10 minutes until yams are soft.
4. Add cinnamon, mix and serve!
